Healthy and Beyond Easy Chicken Cordon Bleu

Because of get togethers last week with friends and family, 
 Lt Dan and I pushed off this meal until last night. 
It was so incredibly easy and deliciously healthy, 
you won't believe it until you try. 
And there's a total of 4 ingredients, 
plus whatever side dishes you choose to pair this with. 
We chose baked potatoes and salad. 

Also, I bought artichoke hearts yesterday from the deli- they are orgasmic. 
Yes I chose that word because it's true. 
Dan HATES HATES HATES artichokes and anything thats associated with them. 
He kept gagging and walking around saying: 
It smells like feet times 100!
 But I LOVE them, so while dinner was baking, I devoured like 4 of them... 
Bad idea cause then I wasn't hungry but pushed through cause this is just so good. 
Better than the artichoke hearts. 
Way better.

Healthy Chicken Cordon Bleu

What you'll need:
1. Chicken boobss
2. Low sodium ham
3. Skim string cheese
4. Bread crumbs
Preheat oven to 350 degrees F
(yes THAT'S IT!! I know it's soo easy)

How to make the easiest meal that tastes like you spent the day in the kitchen:

Pound chicken boobs as thin as you can get them.
We have the coolest tenderizer ever
Put bread crumbs on both sides of chicken boobs.
Once bread crumbs are on both sides,
layer ham slices on one side.
Bread crumbs seem to get everywhere but on the boobs!

Next-
pull apart string cheese and organize on top of ham.
Spray baking dish with Pam and have toothpicks ready.
Starting on one end:
roll into a ball.
Secure with toothpicks
(ours when right through and you could barely see them, so be careful when eating)
Place in greased baking dish and bake for 35-40 minutes or until center is cooked.

And there you have it!!
That.is.it!
I know I couldn't believe it either.
Pair it with some salad, potatoes, and a nice big glass of Riesling and 
you have yourself a regular ol' 5 star restaurant.
